I try to keep my biscuits a bit more healthy than the normal pre mixed bleached white flour kind that a lot of people eat. I also am more of a fan of drop style biscuits. I don't know why I like them better than the others but I just do :).
(adapted from a recipe I saw for cheddar drop biscuits but I can't for the life of me find the site I got it from :( if it's yours please let me know so I can link to you!)
2 cups Whole Wheat All Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder
approx. 1 teaspoon salt (I tend to just eye ball it)
1 teaspoon sugar
1/2 cup unsalted butter
1 cup 1% Milk
either 4 tablespoons melted butter or olive oil, your choice.
If these are exclusively to be for a savory type of meal I would go ahead and add in maybe some Italian seasoning, maybe some pepper or garlic, or some grated cheese. If not then they are great as they are.
Pre-heat the oven to 350F. Whisk your dry ingredients together and then break up your butter into the dry stuff. With fingers blend butter into dry stuff until it resembles coarse sand with pea sized crumbs( I worked on it for about 10 minutes before it started looking that way!). Make a well in the center of the flour/butter mixture and pour the milk in. With a spoon mix gently until dry ingredients are just moist. Don't over mix.
Scoop biscuits onto parchment sheet and bake 12 - 15 minutes for smaller ones (for larger ones like the ones I did you want to leave them in there for about 20 - 25 minutes or they will be too soft inside), turning half way through cooking time. Tops will be pale but bottoms should be lightly golden. Brush tops with melted butter/oil and place under broiler for 1-2 minutes or till tops become golden brown. Take out and let cool for a few minutes while you finish up your gravy!
Now for the gravy I used ground pork though I suggest using whatever you like most (sausage, ground chicken, turkey, beef, I suppose tofu could work as well). Brown the pork in a pan along with 1 chopped onion and 3 cloves of minced garlic. While this is cooking up take about 1/2 cup of 1% milk and mix it with about 3 tablespoons of whole wheat flour, making sure it's mixed well before adding it to the cooked meat. I like Italian seasoning so I always add this to my gravy along with salt and pepper to taste. Let this cook about 10 minutes and it should thicken up a bit, if it doesn't it will when it cools down a little. Pour the gravy over your warm biscuits and your done!
The little one and the hubby both seemed to be suprised with how much they enjoyed this as they had never had it before, though I think the little one would have been happier if I had just put some butter and jam on his instead of the gravy, which is another great way to eat those drop biscuits!
